Rotisserie Chicken is my absolute Best Kitchen Hack for Easy, Stress Free, Weeknight Dinners! Like Chicken & Yellow Rice or Peachy BBQ Chicken Flatbreads. I get 6 of the huge “condor” sized rotisserie chickens from my local wholesale club (Like Costco) and set up 2 big bowls to pull all the meat from the bones. One bowl is for all the meat (mixing white and dark meat together) and the other bowl is for skin & bones. Then I divide the meat into freezer bags with 2 heaping handfuls per bag (I’m 6’1″ and my hands are BIG, adjust if you’re blessed with lovely dainty hands… Basically 2-2.5 cups per bag).
