Rotisserie Chicken is my absolute Best Kitchen Hack for Easy, Stress Free, Weeknight Dinners! Like Chicken & Yellow Rice or Peachy BBQ Chicken Flatbreads. I get 6 of the huge “condor” sized rotisserie chickens from my local wholesale club (Like Costco) and set up 2 big bowls to pull all the meat from the bones. One bowl is for all the meat (mixing white and dark meat together) and the other bowl is for skin & bones. Then I divide the meat into freezer bags with 2 heaping handfuls per bag (I’m 6’1″ and my hands are BIG, adjust if you’re blessed with lovely dainty hands… Basically 2-2.5 cups per bag). This hearty and robust pasta dish is so flavorful thanks to Port Wine reducing down with tomatoes, peppers, garlic and onions. Mmm! Reducing the sauce with the wine intensifies the flavor and only takes a few minutes! Basically, in the time it takes you to cook your pasta, your sauce is done. Quick! Delicious! Easy! Yay!

Ingredients
- 2 cups cooked chicken, pulled
- 1 green pepper, cut into chunks
- ½ yellow or orange pepper, cut into chunks
- ½ large sweet onion, cut into chunks
- 8 oz mushrooms, quartered
- 3 cloves garlic, minced
- 2 tbsp. olive oil
- 2 cans diced tomatoes, Italian style
- 2 tbsp. tomato paste, Italian style
- 1 cup port wine
- 1 tbsp. sugar
- 1 tbsp. Italian seasoning
- Cajun seasoning, to taste
- ¼ cup fresh Italian or flat leaf parsley, chopped
- 1 box rotini or favorite pasta, cooked according to directions
Instructions
- In a large skillet over medium-high heat sauté peppers, onions, garlic and mushrooms in olive oil until tender.
- Season initially with Cajun seasoning.
- Add tomatoes, paste, sugar and Italian seasoning.
- Add wine and cook until liquid is reduced.
- Mix chicken in sauce and cook until heated thru.
- Taste to adjust seasoning.
- Toss with cooked garden rotini or favorite pasta that will hold sauce well.
- Garnish with parsley.
