I love this recipe for weeknight meals, lunch with the girls, or brunch. Perfect paired with a leafy salad and a glass of crisp white wine. So fresh & bright. It’s a Healthy Dishes Winner! My 14 year old son loves them too. He wants to take it for lunch! Can you imagine? That would be my high schooler, showing up to the cafeteria with healthy chicken stuffed portabella mushrooms  in is lunchbox while all the other kids eat chicken tender and pizza. He cracks me up!
