Green Pea Crostini With Prosciutto

I love appetizers that are quick and super easy! Add to that a dish that uses only a few ingredients that you could keep on hand for last minute prep and DING DING DING, we have a winner! Our Green Pea Crostini with Prosciutto is all that and then some! Simply blanch frozen peas in salted water and run them through your food processor with lemon and fresh mint to make a schmear of garden heaven. This stuff is amazing! (I used the leftovers on my toasted bagel the next day and topped it with a slice of tomato, Mmm!) Salty prosciutto and toasty french bread is all you need to make an app that will make quick best friends with whatever you’re serving for cocktail hour!

Ingredients
- 2 cups frozen peas, blanched
- 1/3 cup mint leaves, torn
- ½ tsp lemon zest
- ½ tsp kosher salt
- 1 small garlic clove, grated
- 3 tbl olive oil
- Baguette, sliced and toasted
- Prosciutto
Instructions
- Place 4 cups water in medium sauce pan with 1 tbl salt. Bring to a boil. Add frozen peas and blanche for 2 minutes. With a spider or slotted spoon plunge peas into a salted ice bath to stop the cooking process. Once cooled, remove and let drain.
- In a food processor add blanched peas, mint, lemon zest, salt, garlic and olive oil. Pulse until smooth.
- Preheat oven to 400 degrees. Place sliced baguette on baking sheet. Bake until toasted.
- Smear green pea mixture on toasted baguette slices. Top with a piece of prosciutto.
