My kids are ready to call the authorities on me when I try to give them cereal for breakfast! Really? What kid doesn’t like cereal? Completely stumped! But, nevertheless, that leads me to get creative with hot breakfasts that can be made either quickly or in big batches. This Spiced Cider Oatmeal is a great option too. It’s ready fairly quickly and I use an extra thick oat that stays fluffy instead of getting gummy which makes for perfect reheating another morning in the week (if there’s any left over).

{Breakfast Tip} Most days I’m pulling homemade waffles or pancakes from my freezer (that I whip up on the weekends) and reheating them. Waffles & french toast reheat great in the toaster oven.

Spiced Cider Oatmeal

Spiced Cider Oatmeal

Ingredients

  • 2 cups Spiced Apple Cider
  • 1 ½ cups Extra Thick Rolled Oats (I use Bob’s Red Mill)
  • Good pinch of salt
  • Walnuts
  • Maple syrup
  • Milk

Instructions

  • Bring the cider to boil. Add oats and a pinch of salt and stir. Cover and reduce to simmer for 10-15 minutes, stirring occasionally. Oatmeal will be tender but still fluffy. Top with nuts, syrup, and milk to your liking.
