If you’re like me, your feet hit the ground running as soon as you hop out of bed in the morning. Between my three kids, work, school stuff and sports (my big kids row and the little one dabbles in every sport there is), my family is constantly on the move. Like you, we are a family “On The Go”. Despite how busy we are, I have never said, “I forgot to eat breakfast”. Never. I would die the world’s quickest starvation because it takes a lot to sustain tall people and I am a hungry, hungry girl!
Quick breakfasts don’t have to be junk food though or just a mere bowl of cereal. NBC’s Atlanta & Company to share my favorite healthy on the go breakfast recipes. Quick, yummy and packed with staying power. Breakfast is, after all, the most important meal of the day!
Blueberry Ginger Smoothies
Smoothies are the ideal healthy on the go breakfast recipe! I love these healthy yummy blueberry ginger smoothies because they are packed with mixed fruit, chia seeds, and even some secret spinach. You heard me. Secret spinach! The kiddos can’t taste it at all because the blueberries and the ginger hide it. I love using my Vitamix A3500 blender when making these (or any other smoothie) because it works so well and is super easy to clean. Make them in large batches and pass to your kids on their way out the door to school.
Peanut Butter Banana Smoothies
The second smoothie in our Healthy On The Go Breakfast Recipes video is a classic peanut butter banana, but with a little twist. To make it healthier and tastier, I used almond milk and organic PB Fit Powder. This powder has less fat and more protein than regular creamy peanut butter. It’s so good it could pass for a milkshake! Call it breakfast or dessert, your entire family will go bananas for this sweet treat!
Cinnamon Nut Waffles
Move over box freezer waffles! These cinnamon nut waffles are the answer to grab & toast freezer waffles. Made with lots of good grains and easy to batch on a weekend morning with your waffle maker, they had to be part of our healthy on the go breakfast recipes list! The huge batch listed on our website makes plenty, but I chose to double it and freeze my leftovers to quickly toast for the kids during the week. Top with butter, maple syrup (not the crappy table syrup stuff), or even more nuts and cinnamon. These hearty waffles are super filling and are a great breakfast on the go that you can make ahead of time.
Apple Peanut Butter Sandwiches
Our last healthy on the go breakfast recipes is the one I use the most! I made the easiest 3 ingredient apple peanut butter sandwiches ever. I love a good recipe without a recipe, and here it is.
- Toast Cinnamon Raisin English Muffins
- Spread hearty peanut butter on both halves
- Top one half with crisp apple slices (Gala, Fuji, Braeburn, or Cameo)
- Close the sandwich and hand to hungry people living in your house!
