We have been unusually warm here in Atlanta. Everyday we hit the mid 80’s, I’m yearning for poolside lounge chairs, Bob Marley music, the giggles of children splashing in the pool and a lovely Caribbean blue cocktail recipe that’s the color of the ocean. Today’s “Cocktail Friday” will bring you there no matter what the weather is outside. It uses rum and Hpnotiq, a liqueur made with exoctic fruits, cognac, and vodka. My Bimini Escape is a sweeter cocktail than I would usually make yet refreshing and tastes like summer.

The Bimini Escape

A blue cocktail recipe that's the color of the ocean using rum and Hpnotiq, a liqueur made with exotic fruits, cognac, and vodka.

Ingredients

  • 2 oz Hpnotiq liqueur
  • 3 oz Rum
  • 1 oz Peach Schnapps
  • 1 oz Blue Curacao
  • 4 oz club soda

Instructions

  • Mix all ingredients together and pour over ice.
