Okay, Thanksgiving is close. Like, holy crap! “Thanksgiving is tomorrow” kind of close. So if you are still trying to find one last dish to fill out your Thanksgiving feast, then we have a incredibly simple recipe made with a few ingredients and a box of Uncle Ben’s that might be perfect for you. Here is our Wild Rice with Cranberries and Walnuts.
When I say simple, I really mean it this time. You don’t even have to do all the work of coming up with a great deal of flavoring for the rice. By using a store-bought box of wild rice, you just cook it with the packet of seasoning to add great flavor. Throw some dried cranberries with the water to rehydrate them and the dish becomes more than just boxed rice though.
Besides adding nice bursts of tart sweetness, the cranberries also just look really pretty mixed in with the rice and seasoning. Just look at that!
Once the rice is fully cooked, you can garnish it with some beautiful toasted walnuts, a couple of fresh sprigs of thyme and a lemon.

Ingredients
- 2 boxes Uncle Ben's Wild Rice
- 1 1/2 cup Dried Cranberries
- 2 tablespoons Butter
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Black Pepper
- 4 cups Water
- 1 cup Walnuts (toasted)
- 1 teaspoon Lemon Zest
- 1 tablespoon Fresh Thyme
Instructions
- Combine Uncle Ben’s Wild Rice, seasoning packet, dried cranberries, butter, salt, pepper and water in sauce pan.
- Cook covered 20 minutes or until rice is tender.
- Stir in walnuts, lemon zest and thyme.
