I love any recipe that helps me clean out my fridge! We all have little bits of this and that hanging around in the fridge after all the other meals we whip together through the week. Ingredients
- 2 cups precooked couscous (fluffed with a fork)
- 8 pitted dates (chopped)
- 1 cup garbanzo beans (or chickpeas)
- 1/2 cup sugar snap peas (roughly chopped)
- 1/2 cup cranberry & orange flavored slivered almond salad topper mix
- 1/4 cup green onions (sliced)
- 1/3 cup fresh flat leaf parsley (roughly chopped)
- 1 Small crisp apple (like Gala) (cubed)
- 1/4 cup citrus vinagrette
Instructions
- Mix all ingredients together in a bowl & enjoy!!
- Store remaining in airtight container in fridge for up to 1 week.
