Grapefruit Rosemary Cocktail: The Rosemary Rush
Grapefruit, rosemary, gin and champagne blend to make a cocktail perfect for entertaining! Invite some friends for this new twist on a French 75.

- My car battery died when my adorable little people who I am legally responsible for decided it’s not necessary to turn off the lights inside the car and that there’s some magical fairy dust that keeps Mama’s car running.
- My daughter contracted the worst tummy bug we’ve seen in a decade. We’ll leave the details to your imagination times 10.
- My brand new basement flooded & we’re up at 5:30am ripping up the floors and sopping up water. JOY.
- All this while trying to tackle the world and be supermom (a mythical title) I totally forgot to send in required class supplies and missed the afternoon bus stop so that the neighborhood grandma graciously got my kid off the bus. Rock star. Just sayin.

One of my favorite classic cocktails is a French 75. A few years ago I decided to have a “Year of the Gin“. I hadn’t really known much about gin before that and made a point to order only gin based cocktails when I went out or at an event. I fell in love with a cocktail that had Gin, Champagne, Lemon and Simple Syrup called the French 75. So bright and fresh and the perfect party cocktail. Everyone will drink it!
The Rosemary Rush is a mixture of the rosemary simple syrup, fresh squeezed grapefruit (the best thing associated with winter and my favorite fruit), gin, and any sparkling wine you have on hand like Champagne or Prosecco. And if you’re gonna open a bottle, might as well invite some friends and change show bad luck who’s boss! I’m the BOSS! Which is just what I did. Neighbors came over and we chatted about kids and life and the giggles it brings. I smiled so hard. Best way to end a rough week!
Tonight, I’m giving it an herbaceous twist by making a Rosemary Simple Syrup and swapping the lemon for beautiful pink grapefruit. Lovely!
Simple syrup is just that SIMPLE! Like crazy, ridiculous simple. 1 part sugar meets up with 1 part water and gets into a hot tub till it melts together. No this isn’t a slightly sleazy late-night show on Showtime or “Skin-emax”, its just how to make the primer for nearly every cocktail out there. How you flavor it is up to you! Oh, the power you can wield!
To make rosemary simple syrup, just add a few stems of rosemary to the sugar and water as it boils. Then let it cool and strain into a jar or squeeze bottle. Works with all kinds of flavors: orange, lemon, mint, thyme, ginger, jalapeno, etc. For more details on making simple syrup, read my cocktail post on Bright Lights, Big Citadelle here.

Ingredients
- 2 oz. Vodka or Gin
- ¾ oz Rosemary Simple Syrup (recipe follows)
- 1 oz Grapefruit Juice
- Top with Champagne
- 2 cups water
- 2 cups sugar
- 4 large sprigs rosemary
Instructions
- Bring water and sugar to a boil. Add the rosemary and stir to dissolve sugar Turn off the heat and allow to fully cool for 2 hours or overnight. Strain the rosemary out of the syrup and store in a mason jar or bottle in the fridge for up to 2 weeks
- Mix together vodka, rosemary syrup, and grapefruit juice in a glass. Fill with ice and top with champagne.
