Celebrate With A Lemon Mint Fizztini
Refreshingly crisp and light, this is the perfect lemon champagne cocktail for springtime brunches, showers and Easter celebrations with family! Celebrate!
I had this lemon champagne cocktail at a party once. A beautiful garden bridal shower, with lovely ladies dressed in the prettiest floral and brightly colored dresses and the sweet smell of peonies and freesia filling the breeze from floral arrangements on the tables. I was handed a glass and I fell in love with how refreshingly crisp and light it was.
The perfect bubbly cocktail for springtime brunches or showers and Easter celebrations with family. The base of it is a fruit sorbet, vodka, a sparkling wine, and fresh herbs. This version is lemon, a dryer Prosecco and fresh mint but you could adapt it to whatever you have on hand or what suits your fancy (see my adaptations below the recipe). Remember the cocktail police won’t come knocking on your door if you change things up, and if they do….just hand them a glass and tell ’em to DRINK UP!!

Ingredients
- 3 leaves mint
- 2 scoops (with a mini-scooper) lemon sorbet
- 1 oz citrus vodka
- 4 ounces Prosecco
Instructions
- Place 2 scoops of good lemon sorbet in a glass using a mini ice cream scoop.
- Rub the mint together for a moment and place in the glass.
- Pour vodka over mint and sorbet. Top with Prosecco (a dry sparkling Italian wine).
