Few people ever get past that first bland experience with Brussels sprouts. Unseasoned, unloved little mini-cabbages. So very, very wrong! It’s no wonder this lovely morsel is among the most loved vegetable of most every famous chef! Why.. you wonder, would they ever love a Brussels sprout? Because they know how to make them so dang tasty, you could literally make a meal of just a beautiful plate of Brussels (especially Brussels Sprouts with Bacon) and a glass of wine. Nothing else required! (I have… and was in heaven…Brussels Heaven!)
First, you need a pan big enough to sautee but not steam the little beauties. A crowded pan won’t allow the sprouts to brown and the brown=YUM! Bacon (or pancetta) adds a smoky goodness (but we all already know that, right?) and seasoning them well is the last must-do! So even if you are a sworn Brussels-hater… give them one last shot!

Ingredients
- 6 slices thick cut bacon chopped
- 2 shallots, sliced
- 1 lbs Brussels Sprouts quartered
- 1/2 lb baby Portobello mushrooms, quartered
- 1 tsp kosher salt
- 1 tsp Creole seasoning
- 1/4 cup shaved Asiago cheese
Instructions
- In an extra large, non-stick skillet heated over med-high heat, brown the bacon.
- Once crisping up, add shallots, mushrooms, and sprouts.
- Toss together with spices and cook till tender and golden brown (about 10 min).
- Adjust seasonings and top with shaved fresh Asiago.
