Our Healthy Chicken Stuffed Portabella Mushrooms are no exception! We toss bright veggies, garlicky baked chicken (leftover grilled chicken or rotisserie chicken works great) with our Light & Healthy Chimichurri Sauce. Fill the mixture in big portabella mushrooms and bake. There’s no oils or butters just BIG flavor!

I love this recipe for weeknight meals, lunch with the girls, or brunch. Perfect paired with a leafy salad and a glass of crisp white wine. So fresh & bright. It’s a Healthy Dishes Winner! My 14 year old son loves them too. He wants to take it for lunch! Can you imagine? Healthy Chicken and Broccoli Stuffed Portabella Mushrooms

Ingredients

    Stuffed Portabella Mushrooms
  • 6 large portabello mushrooms (stems and gills removed)
  • 3 cups cubed cooked chicken
  • 1/3 cup red onion, diced
  • 1 cup red bell pepper diced
  • 2 cups broccoli, blanched and chopped
  • Chimichurri (recipe below)
  • Salt and black pepper
  • ½ cup shredded parmesan cheese
    Chimichurri Sauce
  • ½ cup fresh basil
  • ½ cup fresh parsley
  • 1 tsp salt
  • 3 garlic cloves minced
  • ½ tsp black pepper
  • ¼ cup olive oil
  • 1/8 cup red wine vinegar
  • 1 tbsp lemon zest
  • 1/8 cup lemon juice

Instructions

    Chimichurri Sauce
  • Place ingredients into food processor or blender and pulse to combine.
    Stuffed Portabella Mushrooms
  • Heat oven to 400 degrees.
  • Mix chicken and vegetables with chimichurri.
  • Add salt and pepper to taste.
  • Fill portabellos with filling.
  • Cover with foil and bake for 15 minutes.
  • Uncover and top with parmesan.
  • Bake another 10 minutes.
